Here is an easy vegan recipe that the whole family will love.

Ingredients:
2 medium potatoes
2 cloves of garlic
1 handful parsley
10 leaves of fresh basil
Juice of 1/2 lemon
1 tbs warm water
1/4 cup olive oil
salt and pepper to taste (thyme is optional)

Directions:
Preheat oven to 350 degrees fahrenheit. Cut the potatoes long ways into slices as if you were making potato wedges. Oil the baking sheet and place the potatoes evenly across the sheet (if you decide to use thyme, sprinkle the thyme over the potatoes before placing in the oven). Place in the oven and cook for 15 minutes, turn the potatoes and place back in the oven for another 20 minutes or until golden.

For the Chimichurri; chop the garlic cloves, parsley and basil and mix in a bowl with the lemon juice, warm water, olive oil, salt and pepper. Stir and drizzle over the potatoes prior to serving.
